Manchurian Balls
Vegetable Manchurian is a popular Indo-Chinese dish featuring crispy vegetable balls in a savory, tangy, and slightly spicy sauce.
Ingredients
Manchurian Balls:
Vegetables:
- 1 cup cabbage finely grated
- 1 cup carrots finely grated
- 1 cup bell peppers finely chopped
- 1/2 cup green beans finely chopped
- 1/2 cup spring onions finely chopped
Flour:
- 2-3 tablespoons all-purpose flour maida
- 2-3 tablespoons cornflour
- Seasonings:
- 1 teaspoon ginger-garlic paste
- 1-2 green chilies finely chopped (optional)
- Salt to taste
Oil:
- For deep frying
- Manchurian Sauce:
Aromatics:
- 2 tablespoons oil
- 1 tablespoon ginger finely chopped
- 1 tablespoon garlic finely chopped
- 2-3 green chilies slit
Vegetables:
- 1/2 cup spring onions finely chopped
- 1/2 cup bell peppers finely chopped
Sauces:
- 2 tablespoons soy sauce
- 2 tablespoons tomato ketchup
- 1 tablespoon chili sauce
- 1 tablespoon vinegar
Thickener:
- 1 tablespoon cornflour mixed with 2 tablespoons water cornstarch slurry
Liquid:
- 1 cup vegetable stock or water
Seasonings:
- Salt to taste
- 1/2 teaspoon black pepper
Garnish:
- Spring onions
Instructions
Manchurian Balls:
- Mix Vegetables (10 minutes):
- Combine grated and chopped vegetables with flour, cornflour, ginger-garlic paste, green chilies, and salt.
- Shape Balls (10 minutes):
- Form small balls from the mixture.
- Deep Fry (10 minutes):
- Heat oil and fry the balls until golden brown and crispy. Drain on paper towels.
Manchurian Sauce:
- Sauté Aromatics (5 minutes):
- Heat oil in a pan, sauté ginger, garlic, and green chilies until fragrant.
- Add Vegetables (5 minutes):
- Add spring onions and bell peppers; sauté until slightly softened.
- Add Sauces (5 minutes):
- Mix in soy sauce, tomato ketchup, chili sauce, and vinegar.
- Thicken Sauce (5 minutes):
- Add vegetable stock and bring to a boil; thicken with cornstarch slurry.
- Season Sauce (5 minutes):
- Adjust with salt and black pepper.
Combine and Serve:
- Mix Balls and Sauce (5 minutes):
- Add fried Manchurian balls to the sauce and coat well.
- Garnish and Serve:
- Garnish with spring onions and serve hot as an appetizer or with fried rice/noodles.
