Ingredients
  

  • 2 cups poha flattened rice
  • 1 medium onion finely chopped
  • 1-2 green chilies finely chopped
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 8-10 curry leaves
  • 1/4 teaspoon turmeric powder
  • 1 medium potato finely chopped (optional)
  • 1/4 cup peanuts optional
  • Salt to taste
  • 1 tablespoon oil
  • Fresh coriander leaves chopped (for garnish)
  • 1 tablespoon lemon juice

Instructions
 

Preparation:

  • Rinse the poha in a strainer under running water until it softens. Set aside to drain.
  • If using, boil or fry the chopped potato until tender.

Tempering:

  • Heat oil in a pan over medium heat.
  • Add mustard seeds and let them splutter. Then add cumin seeds, curry leaves, and green chilies. Sauté for a minute.

Cooking:

  • Add the chopped onions and sauté until they become translucent.
  • If using, add peanuts and sauté until they are slightly roasted.
  • Add the turmeric powder and mix well.
  • Add the softened poha and salt. Mix thoroughly to ensure the poha is well-coated with the spices.

Final Touches:

  • Cook for 2-3 minutes until the poha is heated through.
  • Turn off the heat, add lemon juice, and mix well.

Serving:

  • Garnish with fresh coriander leaves.
  • Serve hot with a side of tea or coffee.
