Ingredients
- 2 cups poha flattened rice
- 1 medium onion finely chopped
- 1-2 green chilies finely chopped
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 8-10 curry leaves
- 1/4 teaspoon turmeric powder
- 1 medium potato finely chopped (optional)
- 1/4 cup peanuts optional
- Salt to taste
- 1 tablespoon oil
- Fresh coriander leaves chopped (for garnish)
- 1 tablespoon lemon juice
Instructions
Preparation:
- Rinse the poha in a strainer under running water until it softens. Set aside to drain.
- If using, boil or fry the chopped potato until tender.
Tempering:
- Heat oil in a pan over medium heat.
- Add mustard seeds and let them splutter. Then add cumin seeds, curry leaves, and green chilies. Sauté for a minute.
Cooking:
- Add the chopped onions and sauté until they become translucent.
- If using, add peanuts and sauté until they are slightly roasted.
- Add the turmeric powder and mix well.
- Add the softened poha and salt. Mix thoroughly to ensure the poha is well-coated with the spices.
Final Touches:
- Cook for 2-3 minutes until the poha is heated through.
- Turn off the heat, add lemon juice, and mix well.
Serving:
- Garnish with fresh coriander leaves.
- Serve hot with a side of tea or coffee.
